Established in 2020, Bucky’s Varsity Meats is a one-of-a-kind full-service meat shop on the campus of The University of Wisconsin-Madison. We are student-driven, committed to education and showcasing the incredible variety of products and cuts produced at our premier facility, the Meat Science & Animal Biologics Discovery Building.
The University of Wisconsin has nearly 2000 acres of farmland set aside for agricultural research in Arlington, WI – about 20 miles north of campus. This research station is composed of 12 individual livestock and crop units managed by experts who are committed to humanely raising healthy animals with the best welfare available. The Department of Animal & Dairy Science maintains these animals to support their research, instruction, outreach and to support animal agriculture and sustainable food systems. We source quality animals and meats from our farms in Arlington and local suppliers. Once the animals reach our facility, more opportunities for education emerge. Students learn all of the processes that come with meat processing while assisting with graduate student research. The store provides a unique holistic approach to Meat Science Education.

Varsity Meats is located at 1933 Observatory Drive in Madison, Wisconsin, across the street from Dejope Residence Hall and The Natatorium construction. For in-person shopping, customers should use the main entry off Observatory Drive to enter the building. Three dedicated customer parking spaces are located on Willow Drive across the street . Other parking is available in the parking ramp(Lot 67) next to the Meat Science building.
